However, in our present environment in which high-calorie foods are available in virtually limitless quantities, it is likely to be contributing to the obesity epidemic. The circuits and molecules underlying the hedonic regulation of feeding are much less well studied than those that underlie the homeostatic mechanisms. Interactions between the homeostatic and hedonic systems are not well understood, but are likely to be important in the overall regulation of food intake and body weight, with competition occurring between the reward value of food and the satiety signals it generates.
The stimuli that influence these different phases of the meal-feeding process arise from the food itself, such as its taste, smell and visual appeal, and from the consequences of its ingestion and digestion. Examples of the latter mechanical and chemical stimuli include gastric and intestinal distension, and nutrient concentrations in the gastrointestinal tract and post-absorption in the bloodstream. The arrival of food in the gastrointestinal tract also provokes release of a large number of meal-processing hormones and paracrine factors.
